- 1 cup flour
- 1 tsp Baking Powder
- 2 large eggs
- 1 cup milk
- 2 tbsp sugar
- 1 tsp vanilla extract
- 2 tbsp butter
Step 1: Prepare the Batter
Start by whisking together your dry ingredients in a large mixing bowl (flour, sugar, baking powder, and just a pinch of salt!) Once the dry ingredients are mixed, create a well in the center, and add the wet ingredients: eggs, milk, and vanilla extract.
Step 2: Cook the Pancakes
Grab your non-stick pan and start heating it on a medium heat, then put into it your butter (two tablespoon). Now pour your batter in the pan, go for about 1 cup. Let it cook for a minute, just long enough for the edges to start setting.
Step 3: Scramble the Pancakes
Step 4: Serve and Enjoy
Once the scrambled pancakes are ready, sprinkle them with powdered sugar and serve with fruit compote, syrup, or any other toppings you like. I'm sure you’ll love it!
▸ I highly recommend making sure your pan isn’t too hot, as this can cause the pancakes to burn.
▸ To get the fluffiest scrambled pancakes, use eggs and milk at room temperature
