Ingredients

  • 1 cup flour
  • 1 tsp Baking Powder
  • 2 large eggs
  • 1 cup milk
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 2 tbsp butter

Instructions

Step 1: Prepare the Batter

  • Start by whisking together your dry ingredients in a large mixing bowl (flour, sugar, baking powder, and just a pinch of salt!) Once the dry ingredients are mixed, create a well in the center, and add the wet ingredients: eggs, milk, and vanilla extract.

Step 2: Cook the Pancakes

  • Grab your non-stick pan and start heating it on a medium heat, then put into it your butter (two tablespoon). Now pour your batter in the pan, go for about 1 cup. Let it cook for a minute, just long enough for the edges to start setting.

Step 3: Scramble the Pancakes

  • Using a spatula, gently break up the pancake batter into smaller pieces, just like you’re scrambling eggs. Flip the pieces and cook until they’re golden brown on all sides.

Step 4: Serve and Enjoy

  • Once the scrambled pancakes are ready, sprinkle them with powdered sugar and serve with fruit compote, syrup, or any other toppings you like. I'm sure you’ll love it!
