Ingredients

  • ½ cup 120g Greek yogurt
  • ¼ cup 60ml maple syrup or honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup 45g unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup 60g almond flour or oat flour
  • ½ cup 90g semi-sweet or dark chocolate chips

Instructions

  • Preheat your oven to 325°F (163°C) and prepare an 8x8-inch baking pan by lining it with parchment paper or greasing it.
  • In a large bowl, whisk together Greek yogurt, maple syrup (or honey), eggs, and vanilla extract until smooth and well-blended.
  • Sift in the cocoa powder, baking powder, and salt, stirring everything together until the mixture is smooth and chocolatey.
  • Gently fold in the almond flour (or oat flour), mixing just enough to combine. The batter should be thick and rich.
  • Stir in the chocolate chips, ensuring they’re evenly distributed without overmixing.
  • Transfer the batter into the prepared pan and bake for 18 minutes. 
  • When tested with a toothpick, it should emerge with a few moist crumbs. 
  • Allow the brownies to cool before slicing. Enjoy!

Notes

  • Don’t overmix the batter; you want it smooth, but not overworked.
  • Make sure you’re not overbaking. Check with a toothpick to ensure they’re perfectly fudgy, not dry.
  • And, let them cool before slicing! Cutting them while they’re still warm can make them fall apart.
