The Best Fudgy Brownie Bites You’ll Ever Bake

Ingredients

  • cup 55 g unsweetened cocoa powder
  • 2 tsp 10 ml vanilla extract
  • 10 tbsp 141 g unsalted butter
  • 1 cup 200 g granulated sugar
  • ½ tsp salt
  • 2 large eggs at room temperature
  • ½ cup 60 g all-purpose flour
  • ½ cup 75 g mini chocolate chips

Instructions

  • Start by preheating your oven to 350°F (177°C) and greasing a mini muffin tin with butter or non-stick spray, so your brownie bites pop right out. 
  • In a heatproof bowl, combine the butter and sugar and melt them together. You can do this over simmering water or use the microwave, heating in 20-second intervals and stirring until everything’s fully melted and smooth.
  • After melting, whisk in the cocoa powder, vanilla extract, and a dash of salt. Blend the batter until it’s velvety smooth and evenly mixed. 
  • Then, crack in the eggs one at a time, whisking them into the mixture until everything is well combined. This step creates the chewy texture that makes these brownie bites so irresistible!
  • Sift the flour into the mixture and gently fold it in, ensuring there are no flour streaks left. Stir in the mini chocolate chips, folding them carefully to ensure each bite is filled with gooey, melted chocolate. 
  • With a tablespoon-sized scoop or spoon, fill each muffin cup about three-quarters of the way with the brownie batter.
  • Bake for 11-13 minutes. You’re looking for a slightly cracked top and a soft, fudgy center. To test, insert a toothpick—it should come out with a few moist crumbs. 
  • Let the brownie bites rest in the pan for 10 minutes to cool, then gently lift them out. If you can’t resist, enjoy them warm for that gooey, fudgy magic!

Notes

  • Let the butter and sugar mixture cool a bit before adding the eggs, so they don’t cook!
  • Don’t forget to rotate the pan halfway through baking for an even bake, especially if your oven tends to have hot spots!
