Ingredients

  • ½ cup unsalted butter softened
  • ¼ cup light brown sugar
  • ½ cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 large egg
  • cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup rainbow jimmies

Instructions

  • Preheat the oven to 350°F and line the tray with parchment.
  • Add softened butter and sugars to a large bowl. Beat them together for about 2 minutes, or until the mixture is light, fluffy, and smooth. This will give your cookies that soft, melt-in-your-mouth texture.
  • Next, crack in your egg and pour in that heavenly vanilla extract. Mix it all together until everything’s perfectly combined, this step is key for that familiar, comforting flavor we all love.
  • Now it’s time for the dry ingredients. Stir in flour, baking powder, soda, and salt. Stir it all together until it’s a thick, soft dough. Don’t stress if it feels a little dense, that’s just the way it should be! Don’t forget to scrape down the sides of the bowl to gather any remaining flour. 
  • Here’s the fun part: gently fold in those colorful jimmie sprinkles. Don’t overmix, we want them to stay visible and bright, like little pockets of happiness inside each cookie.
  • Roll tablespoons of dough into balls and spread them out. For an extra pop of color, press a few more sprinkles on top of each dough ball.
  • Bake for 8 minutes, or until the edges start turning golden and the middle is just soft. Trust the process, they’ll firm up as they cool, leaving you with that perfect chewy texture.
  • Give them 10 minutes on the pan to set properly. Enjoy every bite!

Notes

  • For an extra chewy cookie, add a tablespoon of cornstarch to the flour.
