Ingredients

  • 1 ½ cups almond flour 150 grams
  • ½ cup cocoa powder unsweetened (45 grams)
  • ½ teaspoon baking soda
  • Pinch of salt
  • 1 large egg
  • ½ cup butter softened (75 grams)
  • 2 teaspoons vanilla extract 10 grams
  • cup granulated sugar 67 grams
  • cup brown sugar 67 grams
  • cup chocolate chips

Instructions

  • Let’s get started! Begin by preheating your oven to 350°F (175°C) to get it ready for baking.
  • Then, grab a mixing bowl and mix your almond flour, cocoa powder, and also baking soda until they're fully blended. I enjoy adding a pinch of salt to balance out the sweetness.
  • In another bowl, whisk together the egg, butter, and vanilla extract. 
  • Then, stir in the granulated and brown sugar and keep whisking until everything is creamy. 
  • Gradually fold the dry ingredients into the wet mixture, stirring gently until a thick dough takes shape. Finally, fold in your chocolate chips. You can always toss in a bit more if you'd like.
  • Scoop about 1 tablespoon of dough, roll it into a ball, and place it on a parchment-lined baking sheet. 
  • Make sure to leave about 1 inch of space between each dough ball so they have room to spread as they bake.
  • Slide the baking sheet into your oven and let the cookies work their magic for 10 minutes.
  • Take your sheet out of the oven and give the cookies for about 5 minutes to cool down. Enjoy!

Notes

  • For an extra texture boost, try folding in chopped almonds, walnuts, or pecans into the dough.
  • You can also consider adding a pinch of cinnamon to the dough, if you love a little extra warmth and depth of flavor.
  • If your dough is too soft or sticky, refrigerate it for 30 minutes before baking.
