Let’s get started! Begin by preheating your oven to 350°F (175°C) to get it ready for baking.
Then, grab a mixing bowl and mix your almond flour, cocoa powder, and also baking soda until they're fully blended. I enjoy adding a pinch of salt to balance out the sweetness.
In another bowl, whisk together the egg, butter, and vanilla extract.
Then, stir in the granulated and brown sugar and keep whisking until everything is creamy.
Gradually fold the dry ingredients into the wet mixture, stirring gently until a thick dough takes shape. Finally, fold in your chocolate chips. You can always toss in a bit more if you'd like.
Scoop about 1 tablespoon of dough, roll it into a ball, and place it on a parchment-lined baking sheet.
Make sure to leave about 1 inch of space between each dough ball so they have room to spread as they bake.
Slide the baking sheet into your oven and let the cookies work their magic for 10 minutes.
Take your sheet out of the oven and give the cookies for about 5 minutes to cool down. Enjoy!
