Why You’ll Love These Greek Yogurt Pancakes

  • Fluffier Than Your Favorite Pillow
We’re talking melt-in-your-mouth, soft pancakes with just the right amount of lift. Thanks to the Greek yogurt, they’re airy without being dry. Your fork will sink into them like they were made for a cozy Sunday morning.
  • Protein-Packed Powerhouse
Greek yogurt is your secret weapon here. These pancakes give you a hit of protein that keeps you full and satisfied long after your breakfast. So you can skip that mid-morning snack, these will stick with you.
  • Simplicity at Its Best
No need to pull out 5 different bowls or fancy gadgets. One bowl, a few pantry staples, and you’re golden. You won’t find a recipe that’s this easy and this tasty.
  • Just the Right Kind of Sweet
Sweet without being too sweet. The honey and yogurt keep things balanced, while the hint of vanilla adds that warm, comforting flavor. No overpowering sugar rush here, just gentle, real sweetness.

The Ingredients You’ll Need

Here’s what makes these pancakes so irresistible:

  • Whole Wheat Flour – Adds a nutty flavor and a little extra fiber, making the pancakes feel a bit more wholesome.
  • All-Purpose Flour – Helps them rise perfectly, giving that soft, fluffy texture we all love.
  • Baking Powder – The magic behind the fluff! It makes the pancakes rise and get that light, airy texture.
  • Cinnamon – A touch of cozy spice that warms up the flavor without overpowering it.
  • Kosher Salt – Just a pinch to bring out the sweetness and balance the flavors.
  • Egg – Binds everything together and gives the pancakes richness and color.
  • Milk – Makes everything smooth and helps create the perfect batter consistency.
  • Greek Yogurt (Full-Fat) – The star ingredient! It makes the pancakes tender, moist, and adds a subtle tang.
  • Honey – Sweetens naturally, giving the pancakes a warm, golden flavor.
Vegetable Oil – Keeps the pancakes soft and moist, with that perfect golden finish.
  • Vanilla Extract – A dash of sweetness and warmth that pulls everything together.

How to Make Your Perfect Greek Yogurt Pancakes

Making these pancakes is as easy as it gets, and I’m here to walk you through it. Let’s get started!

Whisk the Dry Ingredients Together

In a medium bowl, mix together the whole wheat flour, all-purpose flour, baking powder, cinnamon, and a pinch of kosher salt.

Whisk it thoroughly until all the ingredients are well combined. The dry ingredients are your foundation, so this step is key for that fluffy texture!

Mix the Wet Ingredients

In a separate bowl, crack the egg and whisk it until it’s nice and smooth. Then, add in the milk, Greek yogurt (our secret ingredient!), honey, and vegetable oil.

Don’t forget to add the vanilla extract here too! Mix everything until the texture is smooth and creamy. The yogurt creates a soft texture in the pancakes, while the honey and vanilla provide the perfect balance of sweetness and warmth.

Combine Wet and Dry

Now, pour the wet mixture into the dry ingredients. Gently stir them together, but don’t over-mix, just enough to combine everything into a thick, smooth batter.

If the batter seems a bit too thick, don’t worry! Just add a splash more milk until it’s at that perfect pancake-batter consistency. We want it to be pourable, but not too runny.

Prep the Pan

It’s time to get your skillet or griddle ready. Lightly oil it with a little vegetable oil, and then grab a paper towel to wipe off any excess grease.

This keeps your pancakes from getting too greasy, giving them that golden, crisp edge.

Heat the pan over medium-low heat, take your time here, as the right temperature is key to getting that perfect cook.

Cook the Pancakes

Spoon small circles of batter onto your hot skillet. Cook them until bubbles appear on the surface and the edges start to set.

This usually takes about 2-3 minutes. When that happens, give them a flip! Cook for another 1-2 minutes until the bottom is golden brown. Keep an eye on them, they should puff up just right.

Serve and Enjoy!

Once your pancakes are perfectly golden and cooked through, stack them high, drizzle with maple syrup (or your favorite topping), and enjoy! These pancakes are best served warm, straight from the skillet.

3 Mistakes to Avoid

1- Overmixing the Batter

It might be tempting to mix the batter until it’s perfectly smooth, but resist the urge! A few lumps are totally okay. Overmixing can lead to tough pancakes, and that’s the last thing you want.. Stir only until everything is just combined for a light, airy texture.

2- Using the Wrong Temperature on the Pan

A skillet that’s too hot will burn the pancakes before they’re cooked through, and one that’s too cool will leave them flat and soggy. Medium-low heat is the sweet spot, patience here really pays off in golden, perfectly cooked pancakes.

3- Not Measuring the Ingredients Correctly

It may seem like a small thing, but accurate measurements are key to getting the right texture. Too much flour can make your pancakes dense, while too little liquid can leave them dry.  Use a kitchen scale or measuring cups to get it just right!

Topping Ideas

  • Greek Yogurt + Fresh Berries- Double up on the Greek yogurt for a creamy, tangy contrast to the sweet pancakes. Top it off with fresh berries for a refreshing burst of flavor!
  • Nut Butter & Banana Slices- Drizzle almond or peanut butter over your pancakes and top with sliced bananas for a deliciously creamy, sweet combo.
  • Cinnamon Sugar- Sprinkle a little cinnamon sugar on top for an extra touch of warmth and sweetness that’s super easy and delicious.
  • Lemon Compote- Add a bright, citrusy kick with some homemade lemon compote. It pairs wonderfully with the soft pancakes and brings a refreshing zing to each bite!

Ingredients

  • 1 large egg
  • ¾ cup milk
  • ½ cup full-fat Greek yogurt plain
  • 1 tablespoon honey
  • ½ teaspoon pure vanilla extract
  • 2 tablespoons vegetable oil
  • ½ cup whole wheat flour
  • ½ cup all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon cinnamon
  • ¼ teaspoon kosher salt

Instructions

  • In a medium bowl, whisk together whole wheat flour, all-purpose flour, baking powder, cinnamon, and a pinch of kosher salt until everything is fully mixed.
  • In another bowl, whisk the egg until smooth. Next, pour in the milk, Greek yogurt, honey, oil, and a splash of vanilla. Mix until creamy and smooth.
  • Lightly mix the wet and dry ingredients together, being careful not to overmix, just until everything comes together. The batter should be thick but smooth. Too thick? Mix in a bit of milk until it’s nice and pourable.
  • Lightly oil your skillet or griddle with vegetable oil, then use a paper towel to wipe off any excess. Heat the skillet over medium-low heat for the best results.
  • Scoop small circles of batter onto the heated skillet and cook for about 2-3 minutes, until you see bubbles on top and the edges look set.
  • Flip the pancakes and cook for an additional 1-2 minutes, until they’re golden brown and fluffy.
  • Stack them warm and top with a drizzle of syrup, berries, or whatever you fancy.

Notes

  • Check your pan temperature! Too hot or too cold can ruin the perfect pancake. Stick to medium-low heat for even cooking.
  • Make sure to oil the pan lightly, then wipe off any excess. This will keep your pancakes from getting too greasy.
  • Hold off on flipping until bubbles appear on the surface and the edges look firm. It guarantees your pancakes are fully cooked inside.
