How to Make Your Best Healthy Chocolate Muffins

Ready to bake something delicious and nutritious? Let’s dive into making the best healthy chocolate muffins!

Prepare Your Dry Ingredients

Start by sifting together your whole wheat flour, cocoa powder, baking powder, baking soda, and salt into a large bowl.

Sifting ensures there are no lumps and helps everything mix together evenly.

Mix the Wet Ingredients

In a separate bowl, whisk together the coconut oil, honey (or maple syrup), eggs, and vanilla extract.

Coconut oil should be melted, so if it’s solidified, just warm it up a bit.

Whisk until it’s smooth and creamy, this is what will give your muffins that moist texture everyone loves!

Combine Wet and Dry Ingredients

Pour the wet ingredients into the dry ingredients, and gently stir them together with a spatula.

Be careful not to overmix! The batter should still be a little lumpy, and that’s perfectly fine. You don’t want to lose the fluffiness here.

Add in the Almond Milk

Slowly pour in the almond milk while folding the mixture together. The milk will help loosen the batter and give it the perfect consistency for baking. It should be thick but easy enough to scoop into the muffin tin.

Fold in the Chocolate Chips

Now comes the fun part! Stir in the dark chocolate chips (or any mix-ins you prefer) until they’re evenly distributed.

These little pockets of chocolate are going to melt beautifully while baking, creating those irresistible chocolatey bites.

Fill the Muffin Tin

Spoon the batter into your muffin tin. You can lightly grease the tin or use muffin liners to make things easier.

Don’t worry about making them perfectly neat, a little mess adds to the homemade charm!

Bake to Perfection

Pop the tin into a preheated oven and bake for about 18 minutes. To check if they’re done, gently press the top of one muffin with your finger, it should spring back. Or you can insert a toothpick into the center, and if it comes out clean, they’re ready!

Cool and Enjoy

Allow your muffins to rest in the tin for a few minutes before carefully moving them to a wire rack.

Once they’ve cooled a bit, it’s time to enjoy the most delicious, healthy chocolate muffins you’ve ever tasted.

What to Serve with Your Healthy Chocolate Muffins

  • Fresh Fruit: A side of berries, bananas, or apple slices to balance out the sweetness and add freshness.
  • Greek Yogurt: For a creamy, protein-packed topping or dip that complements the chocolatey goodness.
  • Nut Butter: Spread some almond or peanut butter for a boost of healthy fats and extra flavor.
  • Smoothie: Pair with a green smoothie or protein shake for a complete breakfast or snack.
  • Herbal Tea or Coffee: A warm beverage like chai or a cup of coffee to elevate your muffin experience.

4 Mistakes to Avoid When Making Healthy Chocolate Muffins

To make your Muffins a success every time, here are some crucial mistakes to steer clear of.

Overmixing the Batter:

Overmixing can make your muffins dense and heavy. When blending the wet and dry ingredients, stir lightly until just incorporated to avoid overmixing. A few lumps are okay! The less you stir, the fluffier and lighter your muffins will be.

Using Cold Eggs and Milk:

If your eggs or milk are cold from the fridge, they can cause the coconut oil to solidify, making the batter clumpy. Always use room temperature eggs and milk for smoother, more evenly mixed batter.

Using Too Much Sweetener:

While it’s tempting to add extra sweetness, too much natural sweetener (like honey or maple syrup) can make your muffins too soggy or overly sweet.

Remember, the dark chocolate chips already add sweetness, so you can reduce the sugar or sweetener to keep them balanced and healthy.

Not Measuring Flour Properly:

Flour measurement is crucial for the right texture. If you scoop directly from the bag or jar, you might end up with too much flour, making your muffins dry.

To avoid this, always spoon the flour into the measuring cup and level it off for the most accurate measurement. This simple step will give you a perfectly moist and tender muffin.

  • ¼ cup 25g unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup 120g coconut oil
  • ½ cup 120g honey or maple syrup

  • ½ cup 90g dark chocolate chips
  • 1 tablespoon ground flaxseed optional

Instructions

  • In a separate bowl, whisk the melted coconut oil, honey (or maple syrup), eggs, and vanilla extract until the mixture is smooth and creamy for added moisture.
  • Pour the wet ingredients into the dry mix and gently stir with a spatula. Be careful not to overmix, it's okay if the batter has a few lumps.
  • Slowly add almond milk to loosen the batter, folding it until it reaches the right consistency,  thick but scoopable.
  • Fold in the chocolate chips (or your preferred mix-ins) until they’re evenly spread throughout the batter.
  • Spoon the batter into a muffin tin, filling each cup. Use muffin liners or lightly grease the tin for easy removal.
  • Bake at 350°F for 18 minutes. Test if they’re done by pressing lightly on the tops or using a toothpick, it should come out clean.
  • Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to finish cooling. Then, enjoy your fresh, healthy chocolate muffins!

Notes

  • Don’t go overboard with sweeteners. The chocolate chips already add plenty of sweetness, so use just enough to balance things out.
  • Measure your flour properly! Spoon it into the measuring cup to avoid adding too much, which can make your muffins dry.
