How to Make Your 4th of July Cake

Ready to dive in? Let’s get started!

1. Preheat and Prep

Begin by setting your oven to 350°F (175°C). Grab your trusty 13×9-inch pan and give it a light spray with non-stick spray, no one wants a sticky situation!

2. Create the Magic Cake Batter

Start by combining vegetable oil, vanilla, sour cream, heavy cream, and egg whites in a large bowl. Stir everything until it’s completely smooth and fully mixed.

It’ll look dreamy and creamy, that’s your sign to add in the white cake mix. Stir everything until it’s just combined, don’t stress about perfect mixing, this is all about the love!

3. Bake to Perfection

Transfer the smooth batter into the pan, smoothing it out, and place it in the oven for 25 minutes. You’ll know it’s ready if the toothpick pulls out without any batter.

It’s okay if it’s golden brown on top, that’s what we want! Let it cool down before we do the next step.

4. Poke It, Don’t Break It

Here’s where we get a little hands-on. As the cake warms up, take a fork and carefully poke holes all over, ensuring they’re about half an inch apart.

You’re not going for perfection here, just creating pockets for all that fruity Jello goodness to soak into the cake. The more holes, the better!

5. Jello Time

In a separate bowl, mix the strawberry Jello with boiling water until it’s totally dissolved. Stir in cold water and give it a quick mix. Spread the colorful Jello mixture across the cake, making sure to fill every hole and coat the surface completely. It’s like giving your cake a refreshing Jello bath!

6. Chill Out

Refrigerate the cake for roughly 5 hours to let it set. This is when the magic happens, and the Jello sets perfectly. Patience is key here, so just let it rest and relax!

7. Whip Up That Frosting

While the cake is getting its beauty sleep in the fridge, let’s prepare the frosting! In a mixing bowl, blend the white chocolate with cold milk until fully combined. Whisk until smooth and creamy. Slowly mix in the whipped topping and a little pinch of salt.

You want it to be thick and airy, like clouds of sweetness ready to crown your cake!

Spread it out with a spatula into an even layer, but don’t stress if it’s not perfectly smooth, a little texture just adds character!

8. Dress It Up with Berries

This is where the fun happens! Take your fresh strawberries and blueberries and create a flag pattern on top. Layer the strawberries for the red stripes and place the blueberries where the stars should go. It’s easy to make but looks stunningly beautiful—and so full of national pride!

Common Issues and How to Fix Them

Cake turned out too dense

Sometimes the batter gets overmixed, which can lead to a denser texture.

Tip: Mix just until the ingredients are combined! Also, make sure your baking powder (or baking soda, if you swapped it) is fresh to help your cake rise beautifully.

Cake sticks to the pan

Even with non-stick spray, sometimes cakes can stick to the pan.

Tip: Try placing parchment paper at the bottom of the pan before spraying it. This extra step helps the cake release easily after baking.

Cake cracks on top

Why it happens: If your oven temperature is too high or you open the door too often while baking, the cake might crack.

Ensure your oven is fully preheated, and avoid opening the door too soon. You can also try baking at a slightly lower temperature (325°F) for a more even bake.

My Tips for the Perfect 4th of July Cake

Fluffy frosting: Be gentle when folding in the whipped topping to keep the frosting light and airy.

Chill before serving: Refrigerate the cake until you’re ready to serve for the best texture and flavor.

Be patient with Jello: Don’t rush the Jello process. Let the cake sit long enough in the fridge for the gelatin to fully set, or you might end up with a soggy cake.

How to Store Your 4th of July Cake

Refrigerate for freshness: Always store the cake in the fridge to keep the frosting firm and the Jello set. Seal it with plastic wrap or place it in a container that’s airtight.

Avoid sogginess: If you want to keep it extra fresh, wait until just before serving to add the fresh berries. This prevents them from getting mushy or releasing too much moisture into the cake.

Watch the fridge smells: Store the cake away from strong-smelling items (like onions or garlic) to keep the flavors clean and sweet.

Keep it for 3-4 days: This cake stays good for up to 3-4 days in the fridge, so you can enjoy leftovers (if there are any!).

For freezing: If you need to freeze it, store the cake without frosting in an airtight container. Thaw it overnight in the fridge, then frost and decorate before serving.

Ingredients

Cake Ingredients:

  • 1 box of white cake mix
  • 4 egg whites
  • ¾ cup sour cream you could also use buttermilk for extra richness
  • ¾ cup heavy cream
  • ½ cup vegetable oil
  • 2 tablespoons vanilla extract
  • 1 teaspoon lemon juice
  • ½ teaspoon baking soda
  • 1 box 3 oz strawberry-flavored Jello (for that signature red touch)
  • ½ cup cold water
  • 1 cup boiling water

Frosting Ingredients:

  • ½ cup cold milk
  • 1 box 3.4 oz instant white chocolate pudding
  • 8 oz frozen whipped topping thawed
  • A pinch of salt
  • ½ cup blueberries
  • 1 ½ cup sliced strawberries

Instructions

  • Warm up your oven to 350°F (175°C) and apply a thin layer of grease to a 13×9-inch pan.
  • Whisk the oil, vanilla, sour cream, heavy cream, and egg whites together in a large bowl until smooth. Add the cake mix and stir just until combined.
  • Fill the pan with batter and bake for about 25 minutes, checking with a toothpick to make sure it comes out clean.
  • Allow the cake to cool briefly, then poke evenly spaced holes throughout using a fork, about every half inch.
  • Mix the strawberry Jello with boiling water, followed by adding the cold water. Spread this over the cake, letting it seep into the holes.
  • Chill in the refrigerator for at least 5 hours to allow it to set.
  • To make the frosting, whisk together the pudding mix and cold milk until smooth, then gently fold in the whipped topping and a dash of salt. Spread evenly over the chilled cake.
  • Arrange sliced strawberries and blueberries in a flag design, then refrigerate until it’s time to serve.

Notes

  • If your cake comes out dry, it might be slightly overbaked, so start checking it a couple of minutes early.
  • For a fluffier frosting, chill the mixing bowl beforehand.
  • If you plan to lift the cake out before decorating, line the pan with parchment paper.
  • Don’t leave out the small pinch of salt in the frosting, it brings out the flavor beautifully.
